CHEF SIMON BRAZ

Hi, my name is Simon and I am a Chef and have been cooking for nearly 18 years. My love for cooking came from my family who are all Portuguese. My Avó (grandmother) was the best cook I knew, she always asked me before I visited what I wanted to eat when I arrived and I always said the same thing - Caldo Verde (green cabbage soup) and Rojões (confit pork belly).


When I finished school I went to College and studied for 3 years which was one of the best experiences of my life. After I finished college I went to work at lots of different places including hotels, restaurants and private schools.

Eventually I moved to Dorset and that's where I discovered my love for fine dining and working in hotels on the Jurassic coast really opened my eyes to a new level. I love cooking good food but also eating it and have had the privilege to eat in one, two and three Michelin star restaurants around the world. 

My love for cooking went further when I have used some of my holidays to work in Michelin star restaurants, I was fortunate enough to work at the Hand and Flowers in Marlow for a week which gave me so many incredible ideas and to see and understand Tom Kerridge's ethos was inspiring. I was privileged enough to go to Gidleigh Park for a week under Micheal Wignall who is an absolute wizard with flavour.

My wife and I have always loved traveling, but Japan for us was a real treat. We have visited twice now and enjoyed some of the most amazing food there which really spurred me on to learn more about the Japanese cuisine. 

Of course like the rest of the world COVID really affected me but I didn't want to spend the time I was off work doing nothing, so I started a live cooking on Instagram to introduce people to the world of food I know and love! This in turn moved me on to create this website and start my own business, but really focusing on the fine dining cooking classes.
